I am so envious of photos that make a stew/hotspot style meal look good!! 😂😬 haven't mastered that at all. #keepingitreal I had a very small amount of lamb leg cut into strips left (after making my Mongolian slow cooker lamb recipe during the week) & about half a jar of "nomato" sauce in the fridge, made on my meal prep day & needed to stretch it out as much as I could for the three of us as the fridge is coming to the point of nearly empty being the end of the week. Hoping the weather is kind on Saturday for the farmers markets!! I browned the seasoned meat in a cast iron saucepan, added one large sweet potato diced into cubes, my nomato sauce with a bit of filtered water to thin the sauce out added some salt & dried oregano & simmered it for about 20-30 mins over a low heat. Made for a satisfying hearty dish on a dreary wet night. Sweet potatoes & other root vegetables such as parsnips, turnips, swedes etc are a great way to stretch out a meat dish without using nightshade veggies such as white potato. Nomato sauce for those not familiar with it, is a nightshade free version of a pasta/pasatta style sauce. I just chuck in a stack of veggies in a pot (whatever I have, pumpkin, carrot, zucchini, sweet potato etc & 1 small beetroot that's what makes it red) with some filtered water simmer till cooked, empty out a small amount of water depending how thick I need the sauce to be, blitz up with an immersion blender or make in Thermie & blitz from there. Freezes well if you want to make large batches & is so versatile you can use it for stews, hotpots, slowcooker bases such as osso bucco & lots of other Italian style dishes including pasta sauce (we use zoodles or over loaded fill your own sweet potatoes) yum!!! I make my batch unseasoned so you can add whatever herbs & spices you want when you need it.
