Post work meal prep this afternoon. I work 3 school hour days and the other 2 are full days finishing at 5.30pm so I need to be ahead of myself at all times when it comes to meal prep given there are no sandwiches or easy egg options for the boys due to allergies & our grain free lifestyle. Today i had special paleo lamb sausages that i have made up & some chicken patties that i oven baked which served as dinner & school lunches, along with a tray of sweet potato chips, and got these items pictured prepped including browning off lamb shanks which I will put in the slow cooker tomorrow morning with some "nomato" sauce that I also made in my Thermie & dinner will be ready for us when we come home which is a huge sanity saver after a full day at work. It might seem like a lot to do for an afternoon but you will be surprised how easy it is to smash things out once you get started & actually save time during the week if you are replenishing things daily. We even managed to squeeze in homework with an extra child onboard (I help out a friend who is at Uni minding her son after school one day a week) so I am celebrating my parenting win this afternoon!!! (Keeping it real bedtime was an epic fail 😡) As crazy as life sometimes seems - this batch cooking routine i have in place eliminates stress over what's to pack everyday for lunches & dinner is semi prepared or cooking in the slow cooker so no walking in the door & dreading starting a meal from scratch with tired, hungry kids at your heals.
